Fried Rice, Nigerian Style

While my MIL is visiting us, I’m learning as many Nigerian recipes that I can. It’s quite a different way of cooking than I’m used to, but thankful my MIL is very accommodating and understanding. So, of course, we started with the basics: Fried Rice. Can’t mess this up without effort. Good luck!

8 cups of White Rice

4 tsp Curry

Salt, to taste

Green Beans, Corn, Carrots, to your liking

1 cup of Coconut Oil

  1. Put 4 cups of water to boil
  2. Wash rice with water and salt until the starch is gone (basically until you can see the rice in the water, good grief that’s a lot of starch).
  3. Add 4 tsp of curry to boiling water
  4. Add a dash of salt to the water
  5. Add the rice to the water. Let the rice boil for 10 minutes and rest for 8 minutes. Then remove it from the heat.
  6. In a separate pot, add the coconut oil.
  7. Once hot, add in the onions and flavoring (Maggie usually, but you can you use your own or mine or a vegan option).
  8. Once the onions are giving off a delicious scent, add in the vegetables.
  9. Stir until well mixed. Let fry for 10 minutes.
  10. Stir the rice into the vegetables. Let it fry for 5 more minutes.
  11. Enjoy!

Notes:

  1. For the vegetables, you could use a store bought packaged that has the three vegetables already mixed. Or, you could buy them separate, chop them yourself, and use it.
  2. For the flavoring, you could use one of my flavorings or you could get this
  3. You could try this using Brown Rice instead…I haven’t done that yet.
  4. If you’re using shrimp or another fish, add it during #7.
