Cauliflower Trials #2

Cauliflower has a lot of benefits. It has Fiber, Protein, Vitamin C, Calcium, Iron, Magnesium, B-6 but it also has Fats, Carbs, and Sodium. When we look at things, we have to remember to look at the good and the bad. In doing so, we can keep things in perspective, acknowledging that what is helping us can also be over-indulged to the point that it damages us.

And so, I begin the Cauliflower trials. Last night, I made a steak dinner for my hubby. There were mashed potatoes and green beans. It was wonderful. And there wasn’t real steak…or potatoes.

Cauliflower Steaks

2 heads of Cauliflower (because you’ll want that second piece).

Olive oil

Garlic Powder

Salt

Recommendations: You could stop there. Or, you could go out and get your favorite organic seasonings and try different flavors like I did. My local healthy food store had Vegan Chicken Seasoning and Garlic and Herb Seasoning. So I mixed it.

Directions:

  1. Rinse the Cauliflower.
  2. Cut the green stem and leaves off.
  3. Turn oven on at 375
  4. Cut the Cauliflower horizontally.
  5. Steam Cauliflower (You could do this by placing them in the pot with the Riced Cauliflower, see below. Or you could place them in something metal with holes over a pot of boiling water. Get creative. I did). 5 minutes.
  6. Mix seasonings in a bowl with the oil.
  7. Dip the Cauliflower steaks in the oil. Both sides.
  8. Place the Cauliflower on a pan and place in the oven.
  9. Cook for 15 minutes.
  10. Broil the Cauliflower until it’s sufficiently crispy on the top.
  11. Take out of the oven.

Mashed Cauliflower

1 bag of Riced Cauliflower (you could rice the Cauliclower yourself, but I have a baby and don’t have time for that yet).

2 tbsp of Vegan butter

2 tbsp of Nutritional Yeast

1 tsp of Garlic Powder

1 tsp of Onion Powder

Salt

1/3 a cup of Almond Milk

Recommendations:

  1. Instead of Garlic and Onion Powder, you could use the mixture you made for the Cauliflower steaks.
  2. Instead of Vegan butter, you could use Olive Oil, but I’ve not tried that yet. Use caution.

Directions:

  1. Deposit the Riced Cauliflower in a pot.
  2. Steam Cauliflower for 15 minutes, possibly with the Cauliflower steaks.
  3. Dump as much Cauliclower as possible into a Food Processor. (If you don’t have one, use a blender. If you don’t have a blender, mash it by hand using 2 forks.)
  4. Add half of the milk, butter, and seasonings to the food processor (or whatever you’re using).
  5. Puree the mixture until it has the consistency of mashed potatoes.
  6. Dump into a bowl.
  7. Repeat process with the remaining steamed Rice Cauliflower.
  8. Dump the rest into a bowl.

Green Beans

Green Beans, desired amount

2 Garlic Cloves

Salt

Recommendations:

  1. You could use the same seasonings mixture you used for the steaks and mash.

Directions:

  1. If using frozen beans, set them in a pot on medium heat for 10 minutes. If using fresh beans, set them in a pot of boiling water.
  2. Chop the garlic.
  3. Add the garlic and salt.
  4. Place in a bowl.

Enjoy your steak and mashed potatoes! Light some candles, drink some red wine, and binge watch some really good documentaries. Tell me how it went later.
